IP or Internet Protocol is a set of standards defining how data (whether it be it web pages, emails or anything else), broken up into individually addressed packets, is moved across the Internet from a source to a destination. There are two versions in use: predominantly Version 4 (IPv4), and also version 6 (IPv6), which allows vastly more addresses.
